Al Capps Baked Stuffed Mushrooms from Dining With Celebrities compiled by Selma Cherkas

12-15 very large, uniform sized mushrooms
1/3 cup butter
1 medium size minced onion
2 1/4 cups stale breadcrumbs
Salt and pepper to taste
1/2 teaspoon minced garlic
1 teaspoon finely chopped parsley
1 tablespoon lemon juice
Bacon strips
1/2 cup cream
Wash mushrooms. Cut the ends off the stems and remove the caps. Chop the stems finely, add the onions, and saute in butter over a low flame. Stir in breadcrumbs and cook 2 minutes. Add the seasonings. Fill the mushroom caps, heaping the filling high. Garnish tops with narrow strips of bacon and place in a glass baking dish. Pour cream around mushrooms and bake in a 400 oven for 15 to 20 minutes. Serve in the baking dish.
